"Mixed a little differently" most likely means the levels are just going to be a bit different, more clean/polished. Don't expect the "real one" to be much different than the Soundcloud mix.
iTunes releases are ALWAYS mastered before they put it out for sale. They will definitely have to automate the levels on everything (vocals, main mix, instrumentals etc.)
