I remember demi saying they had to go through a list when simon said cece (or paige, i cant remember) didnt like the song.
The producers give them a set of songs and they choose the song from the list including the arrangement and stuff.
Then the contestants rehearse for 1-3 days with their vocal coaches and the creative producer brian friedman for the production. After that, thats when the mentors come in. They polish everything to make it look right.
