Mostly soft cheeses, I hate the stinky yellow ones from the northern west of Europe.
In Italy they have something called Linea, idk if it's the official name of the cheese (sounds like a non-fat bullshi), but it gives me life it's soooooooooooooo good.
After that is parmiggiano, mozzarella and brie.
So many but one specific one that I would like to give a shout out to is the 3 Pepper Colby Jack. Fantastic. Recommend it if any of y'all love a little lit of heat.
