What kinda high quality shade?

Mostly soft cheeses, I hate the stinky yellow ones from the northern west of Europe.

In Italy they have something called Linea, idk if it's the official name of the cheese (sounds like a non-fat bullshi), but it gives me life it's soooooooooooooo good.
After that is parmiggiano, mozzarella and brie.

Blue cheese & cream cheese. The rest can sit.

Swedish gräddost

Cheddar, Swiss, American, Provolone, Bleu Cheese.

Cheddar/American,Pepper Jack,and Provolone are the trinity tbh.

Sharp cheddar.
Bleu cheese for my salads.
