Mac programs can also create those video formats, just as the Windows programs can do. Final Cut Pro and Adobe Premiere can export to just about any video format.

Mail is more comparable to Outlook Express or Thunderbird; Microsoft Outlook is matched on the Mac by Microsoft Entourage.

A word of advice: if anyone tells you a specific type of computer won't be compatible with everything you need to do, they're living in the '90s, when "platform wars" actually mattered. In today's world, it doesn't work like that.
Sure, Windows Vista is a worthless upgrade, and people who currently use a computer with XP should probably steer clear of Vista... but if you get Vista pre-installed on a new computer, it'll be fine. You won't run into many issues because the new computer will be made to run Vista.
On the other side, most people who bash Macs probably haven't given them a chance since the mid-'90s, when they actually fell behind Windows. Today, Macs can do everything Windows can do (and run Windows too, giving you the best of both worlds).
All you need to do is sit down for a few hours to learn your way around the subtle differences, and then you're good. People are too quick to be like "this is a bit different from what I'm used to, so it sucks."
