Nicole is basically a mix of Austronesian (Filipino, native Hawaiian) and white (Russian) with some Mongoloid ancestry (Filipino). She has a heavily Austronesian look so she can pass as other Asians. A lot of people think she's just Filipina, Indian, Cambodian, etc.

I should've been more specific, Nicole has that Spanish mestiza look which can be associated with Alhambra (Spain).
I'm Filipino and trust me Nicole does not look like your typical Austronasian. By her heritage alone she would be classified under Mestiza de Espaņol in the Philippines because she's mixed Caucasian. Filipinos are Austronesian, by the way.
And when I said Romani, I was thinking of the old Romani, like 18th century to 19th century, when they had darker skin and retained their South Indian features. Romani today are heavily mixed with Europeans and have lighter skin, which is not South Indian. Think about it, how can a group be originated from South Indians if they don't even have dark skin, the only explanation is that they lost their South Indian features by mixing with the Europeans.
Basically what I'm trying to say is that Nicole has a really diverse heritage, almost ambiguous. When we're talking about Spain, the Philippines and North Africa, even Central Asia, the population on those regions are very mixed so you can't really classify people that easily either. Nicole can even pass as a Latin American really (the Mestiza type, not the Criollos which are basically White people who just happen to live in Latin America).
