You mean 3rd Party who ALSO develop for Nintendo. It's the same for everyone. Which is exactly why the games like the one above, who aren't developed by Nintendo, suffer the same as every other game.
I can't speak for Microsoft, but Sony's exclusives run brilliantly. There's a reason why NaughtyDog, Japan Studio, Insomniac etc. have such a good reputation.
Exclusives run well on every console they come on, more so than cross-platform.
And you say the "a lot of games on Sony and MS have these problems" etc. when actually all consoles have these problems.
It's called developers rushing optimisation and all third-party games can suffer this no matter what console you're on. The Wii U isn't immune from this, shown exactly why above.
Nintendo games are going to work really well on a Nintendo console. Duh.
But why are companies STRUGGLING to cross release to the Wii U? Because the Wii U has an underpowered CPU, considering the graphics card it uses.

Companies are having to use "Creative Solutions" in order to get the Wii U versions to look good while running great.
This was seen in Batman where they Simplified the Costumes and Backgrounds.
and again in other games (which EA has basically dropped support since then) they blur backgrounds, and use lighting to help show less at once:
Developing games for the Wii U specially, is easy because they make games based on what they have.
But when the Wii U has to run a game designed for the 360/X1 and PS3/PS4 it struggles because those games are designed with a much higher CPU in mind.
The Wii U has the graphics, it just doesn't have the CPU power to match. 3 cores at 1.2Ghz is nothing compared to current computers and gaming systems.
