I could really see them doing that. Obv, the iron throne will be long gone, Sansa/Jon will rule in Winterfell, Daeny will die I think, the Lannisters will be gone (maybe Tyrion will be living somewhere, constantly being surrounded by *****s and wine), and I can totally see all of the protagonists refusing to accept ruling over Westeros once they have beaten the White Walkers. It's not too far-fetched imho.
Spring represents the beginning of life and especially a new beginning. It wouldn't make sense for humanity to fall back into everything after all is being said and done, and Sam does seem to be capable of leading the general folk with purely good intentions + as said before, he's not hungry for more blood, more power, etc..
. But to be fair if he walk a bit to the left he would have been dead by the first shot.
