The point is that this is not what they're doing. They're allowing him to choose before they actually define him and his role; he defines his own role. He's not necessarily going to BE a "man" at all, but he's not necessarily going to be anything else. He won't have to switch because he'll already be whatever it is that he wants to be.
And this isn't setting him up against being a "boy" or "man" in the first place anyway. I was myself raised pretty darn leniently as far as what one would consider traditional "male" gender roles - I watched the Little Mermaid and Sailor Moon, there were feminine clothing items involved, as a kid I'd role play as woman characters - and I turned out a pretty normal cisgender gay guy. It's not like this kid is doomed to turn into someone who's confused or anything; whatever he is, he is, and he'll know it.
Really, gender has no link to sex or any of the purposes for sex beyond the value which society instills in it.
