If you're going to include Joy Division, I would also advise including New Order. You can't have one without the other.

Looking at The Beatles' singles discography, it's just... massive. Including B-Sides there are over 100. How would I organize that?

Also, Jay-Z has a little over 40, not including collaborative singles. Is that a good amount or should I eliminate some?

Maybe the singles, and then whatever else has received some kind of attention? At your discretion. Everything in Its Right Place, Idioteque, Lotus Flower, etc. are all essential.
