When people say "I wouldn't date (insert race here)", I highly doubt that they LITERALLY mean "I wouldn't date (insert race here)". They usually just mean that they don't find members of that race attractive most of the time and to be honest, you need to be attracted to your partner.

To me, racism is when someone is hating on a race. "Oh I hate black people!" "Oh Jews think they're so rich!" etc. Saying "I wouldn't date an Indian person" isn't racist to me, because it's preference. Again, it's like saying I wouldn't date a fat person. Like you just said -- why would you say that without knowing every fat person first

What's wrong with it? Sure, it's not a good thing to be racist, but if you didn't even know they were racist until they told you (as if they kept it a total secret and didn't make it all obvious), then why is it your problem?

Because every race tends to have characteristical features and you know what's your type and what kind of characteristics you like on someone's look.

Also, my best friend (who moved, we live far apart) said she met another guy, and he's like her other best friend... And he's Indian. She's said to me she would never date an Indian person, but that doesn't mean she won't be friends with them.

Yes, but not every person in a particular race has a fixed look or prototype of how it's supposed. So to say, "I don't date ___" is just wrong because not every person in that race is lacking what you want

When people say that I think they simply mean that they aren't attracted to most people of that race and that if they were looking to be in a relationship that that isn't the race that they would gravitate towards immediately.

Well then your friend must be a little close minded. It's fine if she doesn't wanna date that specific friend, but to categorize all indians as something you don't want to date is wrong. Pure and simple. Doesn't have to be racist
