I've been thinking through this all for a long time to get the phone and a separate SIM plan to save me as much money as possible. Buying the phone and SIM separately will save me £200+ and also means I can get a SIM plan with all you can eat texts and data for £17 a month (whereas to get unlimited data with the phone it would be like £50 a month ). As such lots of my stuff can be cloud based, it's just I'm thinking now I still might not have room to store many photos or videos which is something I plan on doing as it will be very useful for my art coursework. Do you think it would be possible with good management of my phone (bearing in mind iOS 9 is smaller and will have app thinning) or not?

It depends on what you'll store.
I'm going the 128GB route because I have 90GBs worth of music. I've been looking at Droid phones and tried their headphone out but only the S6 caught my ears. The M9 is great but I think I wont be happy with its camera.
The problem with the S6 is that it's only available in 64GB in my country so I will be upgrading to the iPhone 6s.
Calculate how much storage you'll use. I calculated mine and it's at 55GBs (including apps) so while 64GB is enough for me RIGHT NOW, in the future it'll be a struggle managing content.
Go for the highest storage capacity you can afford. I plan on using the iPhone until it dies so I think going full blast on it will be worth it. (Well that is unless Windows Phone slays this October but I'm really having my doubts. Keeping my L1520, though)
