It's so interesting because We don't know how this magic really works right now. We know it's glamour, but my understanding has always been that the glamour Mel uses - whether it's her ruby necklace or something else - simply gives her the appearance of her younger self. Not a different person, not an entirely unique creation, just Melisandre when she was younger. Granted, this really is just my assumption, but that's how I've always perceived it.
Keep in mind, I'm pretty sure there are two different magic "spells" going on here. The first being whatever the hell has allowed Melisandre to live so damn long, retain her wits and memory, and be rather physically fit for someone so old, and the second being the glamour that lets hides her real age. In other words, I think whatever magic allows her to live so long doesn't hide the appearance of her age, even if it allows her to avoid the many complications and issues that inherent come with being so unbelievably old. If she wants to do that, other magic is required (glamour).
So rather than thinking Melisandre will take Jon's appearance, I think Melisandre will "give" Jon whatever magic has allowed her to live such a long life, bringing Jon back, but killing her. For book readers, this will be reminiscent of how Beric - rather than Thoros - ressurected LSH. He brought her back, but sacrificed himself - unable to be resurrected like he had been countless times before. Beric gave her the kiss of life - the magic that allowed him to defy death. Likewise, Mel will give Jon the magic that has allowed her to defy death (hopefully not a kiss, for Jon's sake...not looking good though, sorry Jon).
Like I said, if this were to happen, this will be more reminiscent of how LSH was brought back rather than how Beric was brought back, which show-only watchers haven't seen. So either they will do the LSH plot (doubtful at this point, I think), they'll convey it some other way, or they'll just consider the Thoros/Beric dynamic similar enough (which I would agree with). Or I'm just really, really wrong.
