The best way to handle it is not to be dismissive (a.k.a saying "I'm not biased. You are wrong"), but rather to acknowledge their complaint, no matter how ridiculous it may be, and say that you will look at the issue.
I think the #1 thing that gets people mad at mods is that some of them are overly dismissive and do not EVER publicly acknowledge the possibility that they could ever be wrong.

I've been a lot better with that lately tho, it was just the RT meltdown I've had in quite a few months honestly.
The hardest part is that very often we're not wrong - I'm always open to admitting my mistakes and faults, but members come angrily storming into HQ for reasons that aren't close to legitimate 80% of the time. When we make real mistakes the users are almost always calm and collected and we quietly deal with it.
Either way we're working on relations and more will come of this sort of conversation later.
