Maybe he worded it wrong but I get what he's saying. A lot of music nowadays feels disposable, generic, and not quite as grand or timeless as music from the past has been. People like Mariah, Whitney, Celine, and so many others would just stand on stage and wow everyone with their voice. That's kinda missing from people nowadays, other than Adele (and Sam).
Nothing is wrong with big theatrical performances and catchy pop music, that stuff can be great, but I think he's saying that he just wants to bring back more of the timeless kinda simple stuff.
