The term is very common in the Middle East even for Christians or Jews. It's hardly a sign she converted to anything other than the fact she used a phrase many people from the Middle East use regardless of their religion.

And either way it's no one's business what her beliefs are or how they might have changed but it's rather ridiculous to assume her religion based on a very generic phrase.
