she's an extraordinary vocalist , a prolific songwriter , and a magnificent producer ,, why aren't you stanning yet ;p?
Don't listen to the albums once or twice and abandon them , up to this day I discover some new AMAZING Mariah songs .. I used to not like Butterfly .. but once I heard that bridge , the whole song literally changed for me and I really love it now.
my advice is open all her songs on shuffle on iTunes and do whatever you're doing , you'll hear a lot of things you might not immediately like but then you'll also discover new gems!!
Oh and if you're ever bored of a song , just search for it's remix , I've been listening to ATYNAF Remix for the past 6 months and I just started loving Dream Lover and Heartbreaker Remix (the remixes on her The Remixes CD .. they are 10 minutes each)

Edit : What I love about Mariah is that you can really feel that overall change between albums , different production,vocals,feel . And I find myself a lot of times comparing songs from different eras
