It's mainly that being veggie is a pain in the arse. You have to plan/be awkward/make allowances. It's a lot easier to just bury your head in the sand - I did that for ages.

IFPI is based on shipments, not actual sales. But yes, either way, Mediatraffic is not 100% accurate (they have MDNA with higher sales than it's actual shipments).
