Vegetarian - All kinds of meat, chicken and fish aren't allowed (basically anything that entails killing an animal)
Pesceterian - All kinds of animals besides fish
Vegan - Anything you can get from animal is prohibited, even if you don't have to kill it
you just have to coordinate them with what they're good with. I use almond for cereal mostly, soy is good for chocolates and sometimes i use it as an egg substitute in baking. Coconut is delicious and is good for substitute ice cream, rice is my least fav but it works (from home buy it on iTunes) sometimes.

I have tried them all and NOPE, not for me. The coconut one is ok but not as a replacement for regular milk, more like another type of drink.
