I was thinking the same thing. I don't remember her ever swearing so often in one interview (actually, I can't even think of another time she dropped the f-bomb).
The real question, though, is why doesn't she swear in her music? I'd pay for the full You Can't Win bridge; I don't like the "shhhh".

I've heard her say the F word twice during live shows. Once during MLWSWY it was the college show she did w/ Jay-Z around the AIEW era. She was like, "I know that I've got issues but you're pretty ****ed up too." And the other time was at some radio show during Never Again she sang, "I never read your ****ing letter." She is Texan after all
