They don't. The term "ethnic food" means "world food" in British convenience talk, and just means stock that a supermarket has imported from abroad.
For legal reasons, UK supermarkets can only stock imported US goods that are artificial or high in certain bad ingredients if they're put in the World food aisle of their stores.
Also what Americans likely consider "ethnic" food would already be sold elsewhere in Tescos or Sainsburys or wherever.
