Now you mentioned Nicole, Don't Hold Yoru Breath is the primary example of how a demo can evolve.
There is the Keri Hilson & Timbaland demo
Then there is this leaked demo by a demo singer

In this case I could see soemthing similair, I bet this song also has various versions on the shelves. The snippets taht laked are from a demo, she might even have recorded a demo on a guitar or piano or whatever. So much can happen in the studio during the development of a song and Shakia is an artist, so I doubt she was satisfied with the song on the first try.

Also, it depends on the stature of the artist. When it comes to people like Nicole and Keri Hilson it doesn't surprise me that a demo would leak and it would be different because that happens more often with artists that aren't in high demand.
I know nothing of the monster demo so i cant even comment on that.
