you have access to "root" files aka system files n such, some apps can take advantage of those root privileges and do things they normally couldn't.
for example:
ad away is like an adblocker but works with everything, even in-app ads, not just ads in web browser
greenify (can also be used without root but wont be as good) to save more battery, it puts apps to sleep
xposed framework, it lets you install tons of modules that can help you with different stuff, for example saving more battery, you can replace the emoji with emoji switcher and have ios, twitter, samsung, oneplus, emoji one, google, etc. emojis you can also change boot animations, ringtones, system icons, status bar icons, navigation bar layouts, etc.
you can have app stores like aptoide and let it install the apps automatically
you can install tasker, it lets you do certain tasks based on different events, for example when your phone connects to the home wifi/position you can let it set the volume to normal, things like that
and if your phone is rooted + you add a recovery like TWRP you can install other ROMS (like cyanogenmod, MIUI, etc depending on your phone)
and you can do tons of other stuff but i forgot (you can check those 10 best ROOT apps lists n stuff)
