I know at Disney World they close either Typhoon Lagoon one winter / off season for maintainence, and then the next year it stays open and they close Blizzard Beach instead.
But they're in sunny Florida, so they can do that. I imagine parks in other places, especially where it snows, just sorta sit vacant for a few months?

Blizzard is closed during the Fall and opens up around January/February and Typhoon stays open year round (except for low temperatures)
Fun-fact: when Typhoon is closed due to weather, they place all the cast members at greeter positions @ Disney Springs.
