The bulk of Sansa's emotional charge and personal development occurs in her head, the character is trapped for most of the series be it in The Red Keep or the Eyrie and she has to wear a mask of courtesy, servitude and grace while having a powerful and telling inner monologue most of the time.
No actor on the show can has portrayed a character as well as Sophie has with what they've been given (perhaps with the clear exceptions of Diana Rigg, Charles Dance, Michelle Farley and Maisie Williams) and even those characters are easier to portray than the subtle complexities of Sansa.

I totally agree. Sansa's character, in the books, is completely internal, and her chapters are mostly her thinking and observing others, with minimal dialogue that's usually just her BSing anyways. That's incredibly difficult to put onscreen. Sophie Turner does an amazing job with her, and her interviews tell me she completely understands Sansa's character as well, which many people don't.
I feel people just really love Daenerys, and so automatically believe Emilia is some amazing actress. But she doesn't hold a candle to Sophie Turner, who would be getting much more recognition if Sansa's development moved quicker and she had "badass" moments, too.
And I don't think there'll be a break. The showrunners already said that due to the amount of important child actors, they can't risk to slow the story down or take any breaks.
