Alright, natures are easy. With each nature, one stat gets raised by 10% and one gets lowered by 10% (there are five natures that don't raise or lower any stat). For example, an Adamant nature raises Attack and lowers Sp. Attack, while a Modest nature raises Sp. Attack and lowers Attack.
EV's are slightly more complicated. Each Pokemon you battle will give you 1-3 effort values in a certain stat. For example, Bidoof gives off 1 HP EV, and Machamp gives off 3 Attack EV's. 4 EV's in one stat means you get one extra point in that stat; you can have a maximun of 255 EV's in one stat, and 510 EV's overall. EV training is just battling certain Pokemon so that you get specific EV's, raising a particular stat. There are a ton of items you can use to speed up the process, as well as Pokerus, which doubles the amount EV's you get.
