Ethnically of course she's Colombian (not Columbian, Jesus Christ), you could say she's "Latina" in the sense that she's from Latin America just like you would call someone from the Netherlands "European", but "Latina" itself is a misguided term that ignores the fact that someone from Colombia and from Mexico have very different cultures and can be completely different races.
