If Stiles were bi, the writing has been there since early in the first season to support it. He's had lots of moments that implied he could be, but nothing explicit.
Jeff has said many times that it's up to Dylan, if he wants to take Stiles there and Dylan has said a few times that Stiles is not bi, just someone who doesn't judge (I forget the wording, just he's not an asshole basically.)
