This actually changed back in Gen 6 with X/Y.

The EVs max out at 252 instead of 255. Because I've constantly EV trained two stats to their maximum that when I trained the final stat, it used up +6 EVs.

Should I start out with X, OR/AS or wait for Sun/Moon?

If you want access to every Mega stone since X/Y plus the new ones in ORAS, get OR/AS.

If it doesn't matter, go for either.

I would personally say go with X. It has a huge Pokedex, access to the newest Pokemon, character customization, etc. But the story is lacking, and it doesn't have all of the Mega Pokemon.

I suggest wait until S&M, but if you want, go with ORAS if never played Ruby/Sapphire/Emerald or X&Y&Z if you had played them. You can get all the pokes with one game thanks to the GTS, but it will take a bit more with ORAS since is missing 300+ pokes but it has every legendary except for the ones in X&Y.

ORAS have a postgame (the Delta Episode), they have the same battle facility, and they have much more in the way of exploration with Mirage Spots and other trainers' Secret Bases.

I wouldn't advise you wait four months just because we've played these new generation ones. You haven't, and I think it's worth it.
