you're right, coven is awful.
but (as i have already said) every season has its main concept (1 = haunted house, 2 = insane asylum, 3 = witches, 4 = carnival-ish thing) which is just a general idea; however, each as well as numerous subplots, themes, storylines, and concepts sprawled through. ex: Asylum wasn't JUST about an insane asylum--there was a serial killer plotline, a religious theme, insanity, gay rights, aliens, race, nazism, science, etc. see how much is PACKED in just one season that people would say "was about an insane aslyum"?
same with season 1 and 3. just because the idea at it's bare minimum is about the Freak Show does not mean we know the plot--in fact, we know NOTHING. remember when Ryan confirmed 3 was about witches? we had NO idea what would happen--voodoo, race, feminism, etc.
so i'm sure there could still be stuff about the Red Scare/Communism, nuclear testing, post-WWII stuff, etc.
