He did it because of his love of Cersei and he thought that's what she wanted. You don't really get how he feels on the matter on the show, but it's safe to say that he would have handled things differently if he felt it were up to him.

I know cuz first she talks about all the people married to her die being sad and all that, then Olenna said something like you've been great in all this (not sure what she exactly said) which made believe she did know. But she did put Joffrey's cup in front of her grandmother in stead of the bridge she was standing next to. They should've made it clearer tbh.
