From my role I can't really contribute much to this, obviously nutrition at parties is suboptimal - but one night of partying won't have much of an effect.
Speaking of short-term effects, alcohol limits ADH hormone release, which regulates water-reabsorption.
The result is that you lose more water than you should through urine, and dehydrate. Hence the intense thirst in the morning.
