Cereals: Well yeah, the pyramid is only suggesting different alternatives. You don't need all of that (I don't even know what Polenta is)
The point is that our diet should consist of 60% carbs.
Meat: Not absolutely necessary, but it provides us with fatty acids, iron, most importantly protein.
Fish is much more healthy because it contains unsaturated fatty acids, which also transport lipophile Vitamins (A, D, E, K), and are used for membranes and is the best energy storage.
Unlike saturated fatty acids, they are not as much of a heavy burden on cholesterol level.
Milk: I agree. Adults are not meant to drink milk. Our Lactase degenerates over time so we can't properly digest it and it causes diarrhea. But it does contain protein, vitamins and Lactose.
Sun: I've never heard of anyone arguing against the sun. Of course it can cause skin cancer in extreme excess, but without sunlight Cholecalciferole (Vitamin D) can't even be activated. Sunlight is essential. Oo
Exercise: It's a general guideline. Every person has their own daily energy usage based on weight, gender, age, activity and other factors.
