Since they presumably don't have proper jobs/use credit cards and traceable stuff it's likely they could have just left undetected.

Their reasons have been shown though.
Shelby believed she would be safe with Sidney & his crew watching, plus the butcher was pushed into the fire the last time they saw her. Maybe they thought that was the end of her killing people.
Matt wanted to see the witch, it's as simple as that.
