Here's my theory,

I think Matt and Shelby aren't telling the truth on how the escaped that night. I think Matt and Shelby killed the hillbillies in self dense, so that left the butcher with no one to bring her more sacrifices for the next Red Moon. She made a deal with them, in turn for their lives, they have to bring her victims. I think they will lure the documentary team there for a slaughter. The ending was so dramatic and I think done on purpose, cause why would the Butcher's son just randomly stand up to her, it's possibly but I think unlikely. That clearly was a lie created by Matt and Shelby to explain of their escape, get the word out about the colony, make it seem safe, since they are telling people the butcher was burned and is gone.
