As long as the main story arc of Harry & Co. isn't touched, I think Rowling can explore other facets of the universe and not damage the overall brand too much, even if her efforts turn out terrible. HP is much too big to be knocked around by a couple of dud movies. And regardless, first impressions of the new movie, as far as I can tell, have been positive.
She should definitely make something about the first Wizarding war though. Voldemort's real reign of terror.
Acknowledging the human world more in Fantastic Beasts is a good place to start, how wizards interacted with muggles was an element of the series that was never really fleshed out and has a lot of potential.
