Adele could always write a song for a highly publicized and acclaimed TV documentary or program and submit for Outstanding Music & Lyrics, the way Diane Warren did. This seems to me like the easiest bet for a win.
Tony is clearly the hardest, because she would either have to act (which is unlikely if she doesn't pursue a role in Dolan's film) or compose a score/write music & lyrics, and I don't see her pursuing Broadway anytime soon.
Lemme just say that I truly think Corden did not deserve Variety Special at all. The Emmys were clearly just voting for who's popular, and not by merit. If they truly voting for the latter, Lemonade would've won hands down. Even though I obviously wanted Adele to win 100%, Lemonade is an artistic achievement, and it winning would been deserved (I love Bey too so I would've been happy for her too). Then, both Adele and Kennedy Center Honors have a lot of technical work that goes into it on top of great performances, recording a concert/ceremony is no easy task, and for the technical work alone they deserved it too. Amy Schumer's special may have not have had great critical success (and stealing jokes is obviously a low blow), but at least they too had technical effort put into it.
Out of all of those, the special that won was James Corden's, which was in my understanding a lazily made one hour compilation of all the carpool karaoke's that he's done with all those artists, all which were recorded with disposable tiny cameras inside a car.
