Netflix has a different mandate than normal TV channels. They cater for a much bigger and diverse audience so it's likely that you'll like just a selection of their programs, and that's the point.
Netflix is super convenient and I luv it like I luv my Spotify Premium but they have zero quality control and except for a few original series most of them are dumpster fire.
I actually hate Netflix. They're ****ing liars. When I called them over two years ago and begged them to add every season of SVU some bitch told me that she promised within a years time all the seasons would be on Netflix and they STILL ain't there.

Secretly? It's one of the best shows I've seen. The way the shows treats its characters is amazing. It's also one of the coolest shows on TV ever. What other show could so flawlessly play Human Behavior by Bjork and have it be so fitting.
Gilmore Girls is just kinda a slice of life show about the relationship between a daughter and her mother (and the mother's mother). It's really brilliantly written. A bit unrealistic though but that is okay. It's so charming.
GG didn't get half the credit it deserved at its time. The characters were fascinating, the writing was sharp, intelligent, culturally-aware yet never pretentious, the stories were funny and heartfelt, great performances all around... Ugh so good.
