It's not about her skin color, it's about litterally the entire cast looking nothing like the characters we're used to seeing in the movies. If I was watching it, I'd be confused because I wouldn't know who is who.
Again, this wouldn't be a problem at all if these plays were made before the movie, but because we already know what Harry, Ron, Hermione, etc. look like, and this cast looks nothing like them at all, it's confusing. Regardless though, I'm happy for her.
But what I'm trying to say is like, would you want a white person playing Barack Obama?

Regardless of what she said first, the point is that it's not going against the canon. Foremost, the movies are not canon, as they've already proved through various changes that they made that contradict the book. And, as said many times before, Hermione was never white in the books. There's as much evidence as to her being black as there is to her being white.

Yet POC have to deal with this every single time a white person gets casted for characters that we're all used to being colored (INCLUDING REAL people that were REALLY colored in REAL life), but we never get any justice and yalls excuse is always "well white actors are just more talented than colored ones. They just chose the best most qualified actor for the job. Talent always wins!"
Well I'm sorry but it looks like the best actor for the job this time was a black woman for once. Talent always wins indeed. Yall can remain bothered. Hermione is now black and it's canon. Deal with it.

What I'm trying to say though is that this isn't racism. It's not racist to say that Hermione (a white character) isn't black, In the same way it's not homophobic to say that Elsa (a straight character) isn't lesbian.
People were complaining just as much when they casted a girl with black hair as Annabeth in the Percy Jackson movies. They weren't being discriminatory towards people with dark hair, it's just that the character in the story didn't have black hair. It's the same here.
You cast people who act well and look the part, it's just the way Hollywood is.
If a character doesn't already have an established look, then anyone can be that charecter. But we're talking about characters the public already knows and expects to look a certain way. I have nothing against the actress though, like I've said before I'm very happy for her, and she's very talented, and if that's what they want to do, that's their choice.
But like imagine watching a movie, then watching the sequel only to find out that the cast completly changed, and now they look absolutely nothing like the old cast so you're left confused, not knowing who's who and it becomes hard to watch.

 Yet Hermione isn't written as specifically white and Elsa isn't written as specifically straight. You are choosing really bad examples for your point. Also, Matthew Lewis (Neville Longbottom in the films) made a great point that there was no uproar about him playing Neville, despite the character being described as blonde in the books.
There is literally NOTHING wrong with Hermione being black in the stage production. Nothing, nada, zip. People who have a problem with it are showing their racist bias and it's ridiculous.
