I'm not super familiar with anything outside of her singles, tho. I love Vogue, Hung Up, Jump, Beautiful Stranger, LAP. So many more that I can't think of.
Is there a ranking of sorts? Or a listening order? I know she's said herself that she can't stand her earliest efforts, so perhaps I should just start at LAP?

Well, to stan you'll need to know the whole story, if not necessarily LOVE the whole story (anyone who remembers my early 80s scores in the rate can hiss at this). So don't leave out any albums on your journey. Just give yourself the opportunity to like as much as possible.
Everyone's version of events is different. For me, her artistic zenith happens from 1989 through 2005, so I strongly recommend all of the proper albums from this era, as well as the one-off single moments like This Used To Be My Playground, I'll Remember, the Immaculate and Something To Remember singles, Beautiful Stranger, the Next Best Thing songs (Time Stood Still is bae)... I personally am a GHV2 era fan, so 1992-2000 especially gets my vote. You'll be hard-pressed to get me to talk much **** about any song from this period (Did You Do It isn't a real song).
But don't cut anything off without hearing it. A lot of people like the innocence and unbridled, joyful pop songcraft of the first three albums. And her last few have been more grab baggish than her work in the 90s and 00s. From one song to the next, the sound, tone, and theme can change wildly. But there's something to be said for how she's basically now just recording amusement parks and calling them albums.
Long story short: Madonna is a universe unto herself, and it's worth getting lost in completely.
