Because they're all imaginative, inventive and believe they're doing great things.
But yes, they all pretend they're "just making pop music." Thom Yorke said something along the lines of--Radiohead makes pop music and nothing else--after they released Kid A, and Win Butler always insists Arcade Fire only make pop music. I mean, that's cool and all, but Arcade Fire feature the ****ing hurdy-gurdy, so I take their "modesty" less than seriously.
They all know what they strive to do, and it's refreshing, not something to be ashamed of.

I never heard that one, but I've heard him call Paranoid Android something like "one big song full of pop hooks/choruses."

I think the great thing about them as a band post-The Bends is that they reinvent themselves and also make slightly unusual/experimental music accessible for a large audience (hence Kid A going #1, Amnesiac and Hail to the Thief opening with hundreds of thousands).
I'm not familiar with Arcade Fire, but have been meaning to get into them, especially Funeral and The Suburbs.
