Yeah, we pretty much know everything. The only thing we don't see on the feeds are competitions (unless it's an endurance that lasts a long time) and diary room sessions, which is when the HGs go into a little room and talk to the camera candidly, without anyone else there to hear what they say. Not having access to the DRs means we don't 100% know where their heads are at.
There are some other things too, like I'm sure the twist reveals won't be on the feeds.
We can figure out who won HOH/POV by what the contestants say after the feeds come back from a comp. They'll usually say stuff like, "I knew John was going to win. He was running so fast." or something to that extent.
