But even so it's not what she's "known for", it's what Her discography actually is. And with songs like Poker Face and You and I and Anything Goes and Do What U Want and Electric Chapel and Swine and Disco Heaven it's hard for someone to say she's not incredibly versatile

Most have more versatility than Katy, the song still sounded very similar to the original but a bit more heavy on the guitar

Not really, almost all of them showed at least one time that they can pull ou complete opposite genres out of their confort zone.
Katy hasn't, even in 2004 her sound was just a blueprint of what Alanis did in the past. (Don't get me wrong, I love her, but...)

The Fame still has disco (Disco Heaven), TFM rock (DITD) and ARTPOP EDM (Swine, I guess you could make a case for Donatella too).
