I do look up my planets and houses a lot, but it gets complicated when you apparently have to kind of weave it together with the "conjunctions" and the like. That part makes absolutely no sense to me. All I see is that I have a lot of Gemini and Leo in me so I figured it meant I was generally pompous and annoying.

see that's the thing. Some places say it starts on the 21st while others say it starts on the 20th. Which is correct?

the ascending sign is the first impression you give to the others, and it will be the sign that will overtake when you're older. if you don't know what time you were born though, it will not give you the ascendant sign

if you don't know the time, and your family doesn't either, don't fret because it's not impossible, just a little bit complicated to get it.
