"Back To Basics", "Born This Way", "BEYONCÉ" & "Erotica" are the riskiest.
However, I have to mention the "BANGERZ" era (which it's ironically riskier than most of the albums mentioned in this thread, hihi !).

1. She bought her contract out of Hollywood Records and started the recording process by herself without being signed to a major label at the time. She decided to work with Pharrell before his tidal wave of success with 'Blurred Lines', 'Get Lucky' and 'Happy'. And Mike Will Made It wasn't exactly a pop hitmaker neither .
2. The lead single was urban sounding (like NOTHING she released at that point of her career) and referenced sex & drugs on her lyrics ().
3. One of her album covers was a nude photo. And lyrically, "Hannah Montana" singing songs like '**** You', 'Do My Thang', "23" & 'Love Money Party' was unthinkable. Compare the body of work of BANGERZ to her previous records and you'll understand why it is a big deal .
4. She also took a major commercial risk with this album, considering her oldest fanbase got her 4 multi-platinum 1# albums and launched her to global superstardom . However, she still went along with the plan to re-invent herself as an artist and as a brand . The result? Most of her original fans stood by her and she also won new supporters in the process .
5. She evolved visually just as much as she did sonically .
Thankfully, the risk it paid off !!!.

Def Erotica it pushed the boundaries of sexual expression in that era so much so it got unfairly panned (though I never personally liked it).
TVR is an honorable mention due to it's dark/personal themes that set the blueprint for other confessional albums a la rater r, stripped, mizundastood etc...

Both of those albums are the current state of Urban music. Beyoncé did nothing new, she hoped on that "turn up" music trend. Bangerz was just pop music with that urban "twerking" touch.

I think the reasoning is like with Bangerz. People are confusing image with an actual album's musical content being innovative/risky hence some of the laughable responses in here.
Roman Reloaded is one of the most generic albums of all time.
Obviously i'm not saying the music was innovative or a huge risk musically, but the direction she took for the album was a risk for Nicki, she's mainly a rapper doin pop/hip hop music, yet it had a bunch of EDM songs and a couple of songs where she didn't rap at all
