I'm not really sure how the jobs are distributed but does this mean the dialogues are the exact same as the book? Also, what I love most about her style is what the characters think to themselves and her comments about them not their actual replies.

It means that Gillian herself rewrote the book into a script, so if the dialogue was changed, it's still her writing.

Fincher takes her script and makes it into a visual.

She wrote the script. Often they hire screenwriters to adapt novels but being the legend that she is, she did it herself.
