If the people of the general public aren't giving her credit for it, can it really be considered a signature? Based upon the standards you're suggesting, perhaps it would be more accurately described as a big song, a successful song, a hit song, a widely-acclaimed song, etc. as Adele Addict kind of suggested.
Do everyday people, not stans like us or even more casual fans, see her and really think "Oh Adele, that's the girl that sings Skyfall"? Not really, at least not the the people I've come across. They think SLY, RITD, or
maybe SFTTR and not much beyond that. Everyone vaguely conscious in 2011/2012 has heard at least one of those, and, more importantly, identify her by them. That's what defines a signature song to me, instead of sales or awards other measures of success. I.e. SLY spent 2 less weeks total at #1 in the US than RITD but I would still consider it to be the more "signature" of the two.
This is not at all me shading Skyfall, btw. I love it. Along with everything else, obviously
