You are watching tactical gameplay, if you were playing it, it would feel very exciting since death = end of game. It is always more boring to watch others. And besides, you are playing against actual people who could kill you in one shot from behind a rock at 1000 meters.
As for TLOU that's a different kettle of fish, people play that for the story. But what about games like CoD, Battlefield, etc... they are bland and boring, you die and respawn so there's no fear or tension, it's meaningless, they have teeny tiny maps and it's pretty much the same game every time you play it.
And by the way I'm watching the sand surfing and I'm bored after 24 seconds
it's pretty, but it's not terribly exciting and it's not testing your skills, tactics and decision-making against other people...
I need to playthrough Metroid Prime, but I feel like I should wait until I can get the Trilogy 
Just finished it myself and I really liked it. Yeah, you should definitely try Bioshock again after though. You will love it.
