I can. Though right now I'm booked. Pop pop123 is actually the longest one yet and we still have 4 more regions left. Guess Pop thought 95% of the pokemon weren't worth catching.
I've caught only the pokemon I want to put on my team.
I do that too. I never capture for the sake of it, if I'm not going to use it its just wasting space. But I do wish I had the shiny charm. I don't like most of the shiny pokemon, but I could make good trades with them.

Maybe after all this and once you get the Shiny Charm (If You Get It) . You can hunt down and capture all the Pokemon with a pretty good chance in finding some of them in Shiny.
