Only her stans are interested to know about her as a person. The GP couldn't care less about her. They only want good music, which is what she delivers.
No one except her stans see her as a popstar. Her stans (which are mostly bandwagoners) constantly claim her to be a popstar because it'll be easier to drag an artist which they hate/do not like (which is exaclty what you're doing in here).

Just because she doesnt act like typical POP GIRL doesnt mean she is not a POP STAR.
1, Adele is very popular - has huge appeal to GP and mainstream success
2, Adele MAKES POP MUSIC
Yes, she mixes pop with other genres but who doesnt? Whitney, Mariah or Beyonce also mixed pop with r&b and soul and they definitely are considered pop stars by GP (just like Adele).
So please explain to me why do you think she is not a pop star?
