They do, there might be a small delay technically updating graphics and number etc, but each network wants to be the first to accurately call the victor in the end.
There are places in the country where demand for ballots was higher than expected and required photocopied ballots which have to be counted by actual people rather than machines so they take longer to count. Also some stated are paper ballots, some are computerized. Computed data is quicker to disseminate than paper data. There are lots of factors.
